6 boneless, skinless breasts seasoned with olive oil, salt, pepper, paprika, and fresh thyme
Can of tomato paste or diced tomatoes
1/2 cup dark brown sugar
1/4 cup worchestershire
1/4 cup honey
2 tbsp vinegar
1 tbsp grainy mustard
1 Tbsp cumin
2 tbsp paprika
1 tbsp curry powder
2 tsp coriander
3 sprigs of thyme
1 tbsp pepper
2 tsp salt
- Preheat oven to 350. Brush a cookie sheet with olive oil, then place seasoned chicken breasts.
- Bake for approx. 40 minutes, until cooked through
- In the meantime, mix all ingredients for sauce in a slow cooker.
- Remove chicken. Using 2 forks, shred and add to sauce. mix thoroughly.
- Cook on low for 8 hours.
